The Panettone World Cup 2022

The Panettone World Cup final, held from the 4th to the 6th of November, saw pastry Chefs compete from around the world, presenting their leavened creations to a jury of celebrated figures from the pastry industry. Corman congratulates the winners and all those who took part in this wonderful initiative, which promotes one of the best known and best loved Italian specialities: panettone!

A competition to promote the Panettone

The Panettone World Cup is a competition created to celebrate one of Italy’s most famous specialities, now made and enjoyed all over the world. The project began in 2019, a collaboration between its three founders: Maestro Giuseppe Piffaretti, Maestro Pierpaolo Magni and Maestro Angelo Musolino. The competition was designed not to reward excellence in preparing leavened pastry products, but also to celebrate tradition with an opportunity for the most expert Chefs to come together and collaborate. Corman is thrilled to support this initiative, alongside other sponsors from the food service industry, to encourage panettone production and to reward excellence in Italian pastry-making on the world stage.

The competition format

At the 2022 event, the most expert bakers of leavened products battled it out in two different competitions: one dedicated to “Traditional panettone” and the other to “Chocolate panettone”. The final took place on the 4th, 5th and 6th of November, held for the first time in Milan, where panettone was first created. Since then, panettone has been one of the city’s emblems. Competitors from all five continents took part in the final, representing Italy, France, Switzerland, Spain, Portugal, Belgium, Australia, the USA, Brazil and Japan.

The “Traditional Panettone” jury

The jury for the “Traditional panettone” category was made up of celebrated names from the international pastry industry:

  • Vittorio Santoro (jury president), director of Cast Alimenti;
  • Paco Torreblanca, Spain’s best pastry Chef;
  • Debora Massari, Owner of Iginio Massari Alta Pasticceria;
  • Bruno Buletti, Master of leavened products in Switzerland;
  • Jimmy Griffin, Master Baker, Ireland;
  • Rogerio Shimura, Master Baker and director of the Levain Escola de Panificação, Brazil;
  • Giambattista Montanari, president of Club Italia CMP, Corman product demonstrator and leavening expert;
  • Jonathan Mougel, Meilleur Ouvrier de France master Chef;
  • Marco Paolo Molinari, pastry Chef in Japan;
  • Salvatore Tortora, Winner of the Panettone World Cup 2021.

The “Chocolate Panettone” jury

The jury for the “Chocolate Panettone” category boasted just as many famous names from the international pasty industry:

  • Iginio Massari (jury president), Best Italian pastry chef;
  • François Stahl, Master Chocolatier, Switzerland;
  • Jimmy Griffin, Master Baker, Ireland;
  • Jan Pablo Colubri, Chocolatier at Leiter Chocolate Academy Zurich;
  • Jonathan Mougel, Meilleur Ouvrier de France master chef;
  • Bruno Buletti, Master of leavened products in Switzerland;
  • Claudio Gatti, president of the Maestri del Lievito Madre group in Italy;
  • Giambattista Montanari, president of Club Italia CMP, Corman product demonstrator and leavening expert;
  • Davide Comaschi, Chocolate Masters World Champion.

The participants in the “Chocolate Panettone” category were also judged by a jury of press members, who awarded a prize to their favourite panettone:

  • Rossella Contato, journalist for Pasticceria Internazionale magazine;
  • Marcello Forti, food and beverage industry expert;
  • Laura FortiLa Cucina Italiana magazine;
  • Roberta Schira, journalist and writer;
  • Mariella Tanzanella, journalist for La Repubblica;
  • Stanislao Porzio, writer and events organiser.

The winners of the “Traditional Panettone”

The participants who were crowned champions in the “Traditional Panettone” category of the Panettone World Cup 2022 are:

  • Giuseppe Mascolo, Pasticceria Mascolo, Visciano (Naples), Italy;
  • Claudio Colombo, Pasticceria Colombo, Barasso (Varese), Italy;
  • Luca Poncini, Poncini Luca & co., Maggia, Switzerland.

The winners of the “Chocolate Panettone”

The jury of pastry experts awarded the prize for the best Chocolate Panettone to:

  • Annibale Memmolo, Pasticceria Memmolo, Mirabella Eclano (Avellino), Italy;
  • Bruno Andreoletti, Pasticceria Andreoletti, Brescia, Italy;
  • Marcio A. Orellana M., Nima srl in Gorle, Bergamo, Italy.

The press jury’s prize for the best Chocolate Panettone went to Bruno Andreoletti, winner of the expert jury’s second prize.
